Absolutely the Best Chicken Divan in the World- Bulk Cooking

This isn't your Mama's Chicken Divan recipe, it's so much better! This bulk cooking recipe will yield 4-6 meals for your freezer!

Today I’m going to share with you a bulk cooking recipe that I have been using for about two years.

I have tweaked and changed this recipe so many times that it barely resembles the original anymore. It’s so much better now!

Think of this as Chicken Divan, Upgraded!

If you are a large family, you will get 3-4 dinners out of this recipe. If you are an average sized family (four children or less), then you will get about six dinners.

I try to always have at least one of these in the freezer. It’s a family favorite and makes life so much easier on the days when life seems otherwise impossible.

When I made this Chicken Divan recipe yesterday and divided them up, I divided everything into four aluminum pans. Our family has gotten to the point where we require more than a fourth of this recipe to get the job done.

So I made up some roasted potatoes and cut up two pineapples to serve alongside the Chicken Divan.

This could definitely be considered a one pot meal, though. You have your meat, veggie, and starch. If you want to serve more veggies, though, a quick salad will do the trick.

Chicken Divan Recipe

7 cups uncooked wild basmati rice blend (I use the Trader Joe’s blend, and it is amazing! But any rice blend will work, or even plain white rice)

8-12 boneless skinless chicken thighs, grilled, then chopped into bite-size pieces (I marinate these first in a greek style marinade), I have also started using rotisserie chickens…2 large chickens from Costco is enough for this recipe.

32 oz. mayo (I use light mayo)
2 C sour cream ( I use light mayo)
4-6 lbs. of frozen broccoli florets, thawed, and roughly chopped
4 C cheddar cheese
1 T garlic powder
1 T onion powder
1 T salt
1 T pepper

Cook up all of your rice according to package instructions. I cook my rice in chicken broth (made from Better than Bouillion) to provide some extra flavor.

You are going to either need one gigantic bowl or 2-3 large bowls to get everything mixed up. I thought that I had a really huge bowl that would do the trick, but that bowl gets completely filled to the top with not much room to mix.

I went to the restaurant supply store and bought the absolute biggest bowl they had in stock, and it does the trick. But it’s enormous!

Grill and chop your chicken, or take the meat off of your rotisserie chickens. Now it’s just a matter of assembling your ingredients.

Put equal amounts into each of your mixing bowls and get everything mixed up.  I used my clean hands, it makes the job a lot easier.

Then just distribute the mixture equally between however many freezer containers you are using.

To cook the chicken divan, bake at 400 degrees for 20-30 minutes, and enjoy!
